A recipe from the heart – “the” chocolate cake 🤎

This cake holds a very special place in my heart. It was the very first gluten-free cake I learned to bake after my son was diagnosed with celiac disease. It was a time when everything felt overwhelming—ingredients, labels, cross-contamination.

The truth is, I never liked baking because it is too precise, it leaves almost no room for creativity. In cooking, you can improvise, add a bit of this or a bit of that, and somehow bring a dish back to life. But baking doesn’t forgive that. Miss the right quantities, and most of the time there’s no saving it. Therefore, it completely scared me. So now, on top of that, I had to learn how to bake gluten-free—as if regular baking wasn’t intimidating enough. I literally had no idea where to start from.

But this cake changed the game for me. Made with simple, naturally gluten-free ingredients like ground almonds and rich dark chocolate, it quickly became a family favourite, with its moist texture and deeply chocolatey taste, complemented by a subtle hint of orange.

And this photo? It’s the very first one I took of it—nothing fancy, just a VERY proud baking moment that marked a new beginning. My son and I had crafted the decorations together, making it even more memorable. And the single candle was to celebrate our first gluten-free cake, completely unaware at the time that it would be the only one I would know how to make for quite a loooong time.

And after almost 12 years of gluten-free life, we still make this cake quite often because it’s incredibly easy and simple to put together — for his hockey team or a last-minute event. I sometimes make it as muffins, and if blueberries are in season, I replace the orange zest with fresh berries. It’s also lovely served with a scoop of vanilla ice cream.
